Pumpkin Protein Muffins

We found this amazing Pumpkin Protein Muffin recipe from RippedRecipes.com and had to share! Enjoy!

Pumpkin muffins! These are made with rolled oats, not oat flour!
  • 1.5 scoops Vanilla Truetin
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 2 servings (2 packets) stevia
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 T natural peanut butter
  • 1 C Bob's Red Mill Whole Grain Oat Flour
  • 1/2 C unsweetened apple sauce
  • 1/2 C nonfat plain greek yogurt
  • 1/2 C egg white
  • 2 C pumpkin puree (no salt or added sugar)
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine ingredients into a large mixing bowl. Mix together on medium until smooth.
  3. Pour batter into lined (or sprayed) muffin tins.
  4. Top each muffin with 1 pecan.
  5. Bake for about 30 minutes, or until an inserted fork/knife comes out clean.
  6. Cool on a baking rack & enjoy!
