According to the Harvest Calendar we posted to the Activate Body Facebook Page yesterday, cucumbers are in-season!
One of our favorite, go-to salads for summertime is this refreshing Cucumber-Tomato Salad. Not only is it super-simple to prepare, but it's absolutely delicious. The full recipe is below:
Ingredients: - 3 C peeled & sliced cucumbers - 3 tomatos, sliced into chunks - 1/3 C chopped red onion - 1/4 C chopped fresh basil - 1/4 C extra virgin olive oil - 3/4 C apple cider vinegar - 1/2 T red wine vinegar - 1/2 tsp dill weed - Ground salt & pepper to taste
1.) Combine cucumbers, tomatos, onion, and basil in a large bowl. Toss together until mixed well.
2.) Mix olive oil, vinegars, dill, salt, and pepper in a small bowl. Stir until well mixed, then drizzle over cucumber-tomato mixture.
3.) Slowly stir using a large wooden spoon, not too robustly as to not break the tomatoes. Garnish with basil or top with some feta (optional).
Coach's Tip: We suggest preparing the vinaigrette ahead of time and keeping in a separate container. Subsequently, dice your tomatoes, cucumbers, onions, and basil and package in separate tupperware containers. Make this a part of your weekly prep for easy assembly during the week!
