Broccoli Rice & the Rock 'n' Bowl

Coach Will's latest and greatest recipe combo. Buckle up, it’s a good one!  

BROCCOLI RICE

Ingredients:

- 2-3 heads of fresh, raw broccoli (or as much as you want to make)

- 1.5 tbsp oil

1.) Using a food processor, pulse the heads of broccoli until they're about the size of rice grains. Make sure not to overload your food processor, or you'll end up with half mush and half large chunks.

2.) Heat oil in a saute pan over medium heat.

3.) Add broccoli in batches, enough to cover the bottom of the pan with about 1" thickness (NOTE: less is okay, but don't crowd the pan with more than this at once). Let the broccoli cook, without stirring, for 1 minute. After the minute, mix to make sure nothing is sticking, then cook untouched for another minute, mix, and so on. The Broccoli rice will be done when it has a slightly drier look and a light toasty smell.

Now, the choice is yours. You can eat your Broccoli Rice however you prefer, OR you can use it in one of Coach Will’s favorite, Rock ‘n’ Roll sushi-inspired meal:

ROCK ‘N’ BOWL (pictured above)

Ingredients:

- 1 pack broiled eel OR 6 oz cod, turbot, or pollock, sprinkled with a pinch of coriander, cumin, and ginger

- 1 avocado, diced

- 1/2 cup broccoli rice

- Soy sauce & wasabi (to taste)

1.) Set oven broiler to high. Line a small pan with aluminum foil.

2.) Wash sauce off of eel, if using. Place eel or fish on pan, and place under broiler for 5-10 minutes, until hot and done. Eel- 4-5 minutes. Fish- 9-10 minutes, or until completely opaque and flaky.

3.) Assemble your broccoli rice, avocado, and fish/eel, sprinkle with soy sauce and wasabi, and enjoy!
